Chicken, Apple & Walnut Salad

  Ingredients   Portuguese seasoning
  2 skinless chicken breasts   1 tbsp sweet paprika
  2 tsp Portuguese seasoning   2 ½ tsp Salt
 

2 red apples

  1 tsp onion powder
  Juice 1 lemon   1 tsp garlic powder
  4 tbsp crème fraiche   1 tsp cayenne pepper
  1 tbsp honey   ¾ tsp white pepper
  1 tbsp white vinegar   ¾ tsp black pepper
  Baby salad leaves to serve   ½ tsp dried thyme leaves
  75 g Freshlife Walnuts California   ½ tsp dried oregano

Method

Seasoning 

  •  Add dry ingredients into a clean 250ml jar. Close tightly and shake until well combined. Keep unused seasoning in a dry dark place. 

Salad

  • Preheat oven to 180°C. Coat chicken in Portuguese seasoning & place on a lightly oiled baking tray and cook for 25 min until cooked through. Set aside to cool. 
  • Slice apples and toss with 1 tbsp lemon juice to avoid browning. In a bowl, place crème fraiche, honey, vinegar & remaining lemon juice, season and stir well.  
  •  
 Slice chicken and layer on plate with apples and salad leaves. Drizzle with dressing and scatter with walnuts pieces.
