Chocolate Almond Mini Muffins
Ingredients
¼ cup margarine
1/3 cup castor sugar
2 eggs
¾ cup full cream milk
½ cup FreshLife almond flakes
1 ½ cups self raising flour
½ cup cocoa
½ cup dark chocolate chips
FreshLife Almond flakes for decoration
Method
- Preheat oven to 180°C /350°F/gas mark 4 . Spray 2 mini muffin trays with non stick cooking spray. Place sugar and margarine in a bowl and cream until they resemble a light cream colour. Whisk in eggs, milk & vanilla extract.
- In a separate bowl sift together, flour, cocoa and add into wet mixture. Using a metal spoon, stir the mixture until well combined. Add the almond pieces and choc chips and stir in well.
- Spoon mixture into muffin cups ¾ full (no higher) and insert 3-4 almonds flakes onto top of each muffin. Bake for 15-20 min, or until a skewer inserted in the center comes out clean. Allow the muffins to cool before removing them from the trays.
