Chicken Almond Broccoli Stir Fry

Ingredients

2 ½ tbsp olive oil 
750 g chicken tenderloins, thinly sliced
1 medium red onion, cut into think wedges
2 bunches Broccoli, trimmed & cut into small pieces
½ cup oyster sauce
½ cup FreshLife almonds (Natural)
350 g Singapore noodles 
 
    
Method

  • Place noodles in strainer and rinse under hot running water and set aside. Heat a wok over high heat until hot. Add 2 tsp of oil. Add almonds & stir-fry for 2 min or until golden brown. Remove and place onto a plate. 
  • Add 2 tsp of oil and heat until hot, add 1/3 chicken and fry until golden. Place chicken on a plate. Repeat process with remaining chicken. Add remaining oil to frypan, toss in onion & cook until onion becomes tender. 
  • Add broccoli to wok, stir & cook until bright green. Return chicken to wok, add oyster sauce and cook until it has heated through. Add noodles & almonds to stir fry until well combined. Serve immediately.
